This one-week program will provide you with hands on experience creating true Neapolitan pizza. The course is designed for pizza lovers who want to perfect their home pizza routine, as well as business owners who are looking to increase the overall quality of their product.
Through a series of online classes, your AVPN-certified professional trainer will guide you in perfecting your technique, and instruct you in the theory and practice of pizza making. Throughout the week, your trainer will also be available for round-the-clock consultations.

You will learn the fundamentals of authentic Neapolitan pizza making, including:
  • Dough making by hand and/or by dough mixer;
  • Kneading techniques on the working desk, including the Neapolitan “slap” style;
  • Dough-ball separation and dough handling during the rising stage;
  • Baking techniques and pizza handling in a wood-fired or gas oven;
  • Recognizing and working towards the making of an ideal product;
  • Finding the perfect recipe for your home or business.
You will need to prepare:
  • 00 flour (kg 20)
  • Fine sea salt (kg 1)
  • Fresh beer yeast (gr 20) or dry yeast (gr 7)
  • Peeled canned tomatoes (kg 8)
  • Extra virgin olive oil (ml 500)
  • Dried oregano
  • Fresh basil
  • Fresh garlic
  • Fresh fior di latte
