Deep Fried Happiness and Bubbles
Spend the morning with us preparing delicious typical Neapolitan fired street food that we will pair with fantastic local sparkly wines
During this brief but fun cooking class, hosted at the European School of Sommeliers venue, you will learn the secrets to prepare at home some of the most delicious Neapolitan streetfood dishes with our Chef and Pizzaiolo Alessandro Izzo. Once the dishes are ready you will eat them while pairing them with some of the most delicious local sparkly wines.
You will learn how to make from scratch the famous "pizza fritta" which is a deep fried pizza (calzone) stuffed with ricotta, black pepper, cicoli (cured pork but vegetarian options are possible), the "pizza montanara" which is deep fried pizza topped with tomotoe sauce, basil and parmigiano and last but not least the "mozzarella in carrozza". This literally translates to mozzarella in a carriage and is a mozzarella sandwich rolled in beaten eggs and then fried.
Once the food preparation is over you will be able to eat everything while pairing it with three of our most delicious local sparkly wines while seated in the lovely atmosphere of an Italian winery, where if you wish, you will be able to buy great wines from the incredible selection available.

You will be welcomed by Chef Alessando at the meeting point, from there a very brief walk to the venue where the cooking will start after a brief description of the dishes that will be prepared and their history.
You will be making pizza dough from scratch so that you learn all about the ingredients and the kneading tecniques so that you get the feel of how the end result should be. This dough will have to leaven for at least 8 hours before it can be used so we will have some ready for you to use for the two kinds of pizza you will be making, the one prepared during the class can be taken home by the customer and used later that day or the day after.
The second step will be laying out the dough for both the pizza fritta and the montanara, how and with what to season them with and cooking tecniques.
The third step will be the preparation of the mozzarella in carrozza.
Once all the food is ready you will be seated in the unique atmosphere of an Italian winery, where you will be tasting your creations while pairing them with three of our most delicious sparkly local wines described to you by one of the Continisio brothers, both great and experienced Sommeliers and owners of the venue.
